The Recipe: Healthy Date Bites

Ingredients

  • Dates
  • 100% peanut butter (no added sugar, salt, or oil)
  • 70% dark chocolate
  • Mixed nuts (or seeds if you prefer)

Equipment

  • Tray
  • Sharp knife
  • Chopping board
  • Hob or microwave
  • Small pan
  • Small bowl
  • Teaspoons
  • Baking paper
  • Kitchen roll
  • Fridge

How to Make Them

1. Melt the chocolate

Start by gently melting your dark chocolate. You can do this using a bowl over simmering water or in the microwave just stir regularly until smooth.

2. Prepare the dates

Carefully slice each date open and remove the pit. You can:

  • Keep them whole and fill them individually, or
  • Get creative by flattening and pressing a few together for a larger layered bite.

3. Add the peanut butter

Use a teaspoon to keep portions balanced:

  • Add 1 teaspoon to each individual date
  • Or spread around 3 teaspoons across a larger flattened version

This not only helps with portion control but ensures the perfect flavour balance.

4. Dip in chocolate

Coat your filled dates in the melted chocolate, making sure each one is evenly covered. Or drizzle over the top of the flattened version.

5. Add your toppings

Sprinkle over your mixed nuts (or seeds). These add:

  • Healthy fats
  • Extra protein
  • Fibre variety (great for gut health)
  • A delicious crunch.

6. Chill and set

Place your date bites on a lined tray and pop them into the fridge for a couple of hours until the chocolate sets.
